Why does a cup of flour weigh less than a cup of sugar?

Because they have different densities. A cup measures volume, but the same volume holds different weights depending on how heavy and how tightly packed the ingredient is. One US cup of all-purpose flour is only about 120 g, while a cup of granulated sugar is around 200 g, a cup of butter about 227 g and a cup of water roughly 237 g. That is why the tool asks which ingredient you are measuring before it converts cups to grams.

Should I weigh ingredients instead of using cups?

For baking, weighing with a kitchen scale is far more reliable. A cup of flour can vary by 20 percent or more depending on whether it is scooped or spooned and how settled it is, and that swing can ruin a delicate cake or loaf. Grams remove the guesswork. For soups, stews and everyday cooking, volume measures are usually accurate enough, so cups and spoons are perfectly fine.
