How do gas marks relate to °C and °F?
Each step on the gas mark scale is roughly 14 °C, or about 25 °F. Gas mark 4 is the common middle setting, equal to about 180 °C or 350 °F. From there, gas 1 is around 140 °C (275 °F), gas 6 about 200 °C (400 °F) and gas 9 about 240 °C (475 °F). The reference table lists every mark, so you can match a recipe quickly without doing the arithmetic yourself.
Do I need to lower the temperature for a fan oven?
Usually yes. A fan, or convection, oven circulates hot air, so it cooks faster and more evenly than a conventional oven at the same dial setting. A common rule is to set a fan oven about 20 °C, roughly 25 °F, lower than a conventional recipe states — so 180 °C conventional becomes about 160 °C fan. Ovens vary, so check your manual and keep an eye on the food the first time you try it.
